How awesome is cinnamon?

Day 1: Cinnamon Infused Vodka

You can see how it’s already a bit tinted (this is maybe 5 minutes after it’s first shake).

Watching this infusion progress has been so entertaining. Held up to the light, I can see the swirls of essential oils blending in. The infusion got shockingly darker, fast.

Day 3: Cinnamon Infused Vodka

It already tastes fabulous–like cinnamon tea! It is incredibly smooth, not at all bitter or astringent, and very flavorful. I need to go back to see what variety of cinnamon I’m using (I purchased it in bulk from the local snooty store). Over the next four days, the color should deepen, the flavor intensify and develop, and the aroma…well, it probably can’t be any better than it is now.
