Infusing simple syrups is a great way to combine your sweetener with a little flavor. As you might remember, I posted general instructions on simple syrups some time ago. Generally, the heat of the boiling sugar means letting it cool slightly before adding your infusion components, but for these three it’s perfectly safe to boil them a bit (which also speeds things up). This makes it ea


  • 3/4 cup white sugar
  • 3/4 cup water
  • ONE of the following: 2 tbsp whole clove, 2 tbsp whole black peppercorns, or 1/4 cup whole star anise


  • Bring water and sugar to a rolling boil over medium heat for about 3 minutes.
  • Stir in spice and remove from heat. Allow to cool for about 20 minutes.
  • Add syrup, spice included, to a sealable glass jar and leave in a cool, dark place for about 12 hours (overnight).
  • Move to the fridge and let infuse another week or more. If you really want to use some it’s OK to spoon it out.
  • Strain into a bottle and then store in the refrigerator.

Tip: For the black pepper, I actually went 6 weeks and I’m glad I did–gave it a great kick! So, I would recommend trying to forget about it for a while in the fridge before using. Laziness: it’s an infuser’s best weapon.


  • Mix a quarter shot with a shot of a complementary spirit for a great shooter.
  • Use to sweeten up a {booze} & soda drink.
  • Use in recipes to add a little zing with your sweet
